Hudson Baby Bourbon Whiskey
Hudson Baby is the product of a number of unusual decisions. As we all know, unconventional parents tend to make the most interesting offspring, and in this case, the result is one uncommon baby. This is a very young whiskey (aged about 4 months), and it is made of 100% corn. The aging takes place in charred new American oak barrels, which allows the spirit to receive the designation of “bourbon” rather than simply being called corn whiskey. The barrels used are smaller than usual, only about 2-3 gallons, so the bourbon ends up taking on a lot more color and wood character despite the shorter aging time. Finally, loud bass-heavy music is played throughout the warehouse, ensuring that the liquid vibrates inside the barrel a bit, ultimately encouraging more wood contact and aerating the process a bit. Like we said, lots of unusual decisions here. The nose is corn heavy with obvious vanilla from the oak. On the tongue there’s a great gingery almond flavor, and the finish has notes of honey.
