Harvest Spirits Cornelius Applejack
Since colonial times, applejack was made by freezing barrels of hard cider during the winter, then tapping and removing the alcoholic center. This crude method created a very harsh liquor, but at Harvest Spirits, the spirit is carefully distilled three times, resulting in a much smoother product. This delicious applejack is named after Cornelius, the man who pressed apples at the Golden Harvest Farms for over 30 years. For each bottle, over 60 pounds of fresh, Hudson Valley apples are pressed, fermented in bourbon barrels, and carefully distilled in small batches. The resulting spirit displays subtle notes of apple and vanilla which lead to a clean, spiced finish. Enjoy neat, on the rocks, or with your favorite mixer.
