Slaughter House Whiskey
Rock star winemaker David Phinney of Orin Swift Cellar (he, of Prisoner Wine fame) has produced yet another whiskey rested in wine barrels. This one, after spending 9 years in American oak, is further matured in Papillon barrels (Papillion is a high end Bordeaux blend created by Orion Swift) which adds perfumed aromatics and rounds out the mouth feel.The spirit is then tamed with pristine water originating from a natural hillside spring found on Dave Phinney’s property, 2000 feet above the Alexander Valley in California, to be bottled at 88 proof.
Tasting Notes:
Intense and inviting with caramelized sugar, baking spices, dark fruits, butterscotch and vanilla notes. The palate is smooth, ultra rich and layered. The finish is impressive with honey, toast and loads of caramel.
